Why can't every weekend be like Memorial Day Weekend? Mine is usually spent at the lake- early morning coffee on the deck, bike rides on the Heartland trail, barbecuing, and just enjoying the beautiful summer weather; and this Memorial Day was no exception.
Waking up to the calm lake, the smell of coffee, and warm sunshine is my definition of the perfect morning. The only thing missing was my husband Walker who had to work all weekend, poor guy! My parents house was looking extra bright with fresh picked flowers and funky accessories that my mom picked up at Anthropologie.
My mom, sister and I had lunch at my favorite spot in town "The Green Scene", an adorable organic market. I'm always so inspired to cook when I go there. Everything is so fresh, its hard not to buy everything in the market! We decided to make a dijon marinade with parsley, garlic, and onion for shrimp and chicken along with grilled veggies and ciabatta bread. (recipe below)
For 1 lb of shrimp (combine in a large plastic zip-loc bag and marinate all day before grilling)
2 tbsp dijon mustard
1/2 cup olive oil
juice of 1 lemon
handfull of freshly chopped basil
handful of freshly chopped flat leaf parsley
3 cloves of crushed garlic
1 finely chopped onion
1 tbsp salt
1 tsp black pepper
